Sweet & Tangy BBQ Meatballs

Sweet & Tangy BBQ MeatballsThese super-easy meatballs are a standard game-day comfort food. Heat 2 tsp canola oil in a Dutch oven or heavy duty pot over medium heat until shimmering. Add ½ small onion, finely chopped, and cook, uncovered, 2 minutes or until soft. Stir in 2 cups packed brown sugar, ¼ cup orange marmalade, 3 tbsp Worcestershire sauce, 2 tbsp barbecue sauce, 1 tbsp cider vinegar and 2 tsp Dijon mustard and bring to a boil. Add a 26-oz. package of frozen fully cooked meatballs, reduce heat to low and cook, covered, 25-30 minutes or until heated through, stirring occasionally.

Pretzel & Cheese Football

Cheese Football recipeCreamy cheese + crunchy pretzels = ideal party food. In a large mixing bowl, combine 2 8-oz. packages of softened cream cheese, 8 oz. shredded sharp cheddar cheese, 2 chopped green onions, ½ cup mayonnaise, 2-3 tbsp Dijon mustard, ½ tsp Worcestershire sauce and salt and pepper to taste. Refrigerate, covered, 2 hours or until firm then form into a football shape on a platter. Coat with 1 cup of coarsely processed pretzel twists then create the football laces from a few pieces of string cheese.

Baked Buffalo Wings

Baked Buffalo WingsNo football party is complete without hot wings. Rinse and pat dry about 3 pounds of chicken wingettes. In a large bowl, whisk together ¾ cup ketchup, 3-4 tbsp Tabasco® sauce, 3 tbsp white vinegar and 4 pressed garlic cloves. Add the wings and toss to coat. Bake on a parchment paper-lined bar pan for 45-50 minutes at 375°F. Serve with celery sticks and your favorite dressing. Tip: the best way to press garlic is to leave it in its peel—you just need a good garlic press!

Hot Pizza Dip

Hot Pizza DipThis hearty party dip is so good you’ll want to make extra. In a small bowl, combine 8 oz. softened cream cheese and 1 tsp Italian seasoning; spread onto the bottom of an 8″ baking dish. In another bowl, combine 1 cup shredded mozzarella and ¾ cup grated Parmesan cheese. Sprinkle half of the shredded cheese over the cream cheese mixture then top with 8 oz. pizza sauce and the remaining cheese. Bake at 350°F for 15-20 minutes or until bubbly. Top with about ¼ cup of diced bell pepper, mushrooms and olives and serve with toasted baguette slices.

Individual Quesadilla Cups

Individual Quesadilla CupsSingle-serving quesadillas are way more convenient than a platter of messy nachos. Cut off the rounded edges of 3 burrito-sized tortillas then cut into 12 squares and press into the wells of a greased Brownie Pan. Roughly dice 1 medium red bell pepper, 1 small seeded jalapeño and 2 green onions and add to a medium bowl. Add ½ cup grated Colby Jack cheese, ½ cup sliced pitted black olives and 2 tsp chipotle spice blend and mix well. Fill each tortilla with 2 heaping tbsp. of the mixture then sprinkle on the rest of the Colby Jack cheese. Bake at 400°F for 10-12 minutes. Top with avocado slices and serve with Fresh Tomato Salsa.

Twice Baked Potato Bites

Twice Baked Potato BitesPotato skins and football go hand-in-hand, and these come together fast so you don’t miss a minute of the game. Cook 4 slices of bacon until crispy then set aside; crumble once cooled. Cut 10 unpeeled “B” size red potatoes in half crosswise and scoop out a ½-inch well from each. Arrange in a microwave-safe baking dish, cover with parchment paper and microwave on high 9-12 minutes or until tender. Divide a mixture of 4 oz grated mozzarella cheese, 2 oz grated Parmesan cheese, 3 tbsp mayonnaise and 3 tbsp sour cream evenly among the potato wells. Microwave, uncovered, on high 1-2 minutes then top with crumbled bacon and green onion slices.

Pigs In A Blanket

Pigs In A BlanketWhen the pigskin is flying on TV, pigs in a blanket are a must-have party appetizer. Sprinkle a cutting board with cornmeal and unroll 1 11-oz package of refrigerated bread stick dough over the cornmeal. Spread 2 tablespoons Dijon mustard on the dough and then cut the dough along the perforations to form 12 strips. Next, diagonally cut each strip in half lengthwise to make 24 long, thin triangles. Place a fully cooked small smoked sausage link on the short side of each triangle; roll up and place, point down, on a pizza stone. Bake at 375°F for 14-16 minutes or until golden brown.
